Cossack Sparkling Wine2015
Our Cossack vintage sparkling wine is made from a blend of the Auxerrois Blanc (Auxerrois Blanc is a cross between Gouais Blanc and Pinot Noir, which have the same ancestry as Chardonnay), and Rulander grapes (a German synonym for Pinot Gris). It is made using the traditional bottle fermentation method and aged for at least four years on its lees. The name Cossack is taken from the Danebury trained 1847 Epsom Derby winner.

Bright and fragrant nose with aromas of white blossom, candied lemon and peach. This is a fresh yet complex style, showcasing more stone fruit flavours and zingy grapefruit notes on the mid-palate with a touch of toasted almonds on the finish. A refined sparkling wine with real precision, balance and longevity.
